Executive chef returns to Sky Restaurant Concepts

Estes to refresh Squid Ink, Urban Agave

Sky Restaurant Concepts has announced the return of Chef Schuyler Estes, whose culinary expertise and visionary leadership are set to elevate the dining experience at Squid Ink Peoria and Urban Agave, according to a news release.

“I am thrilled to re-join Sky Restaurant Concepts and bring new culinary innovations and continue our tradition of excellence,” Estes said. “I look forward to working with the talented team here to create unforgettable dining experiences for our guests.”

As a co-founder of Sky Restaurant Concepts alongside Parker Ganem, Estes played a key role in launching Squid Ink Sushi in Peoria and expanding it to three locations. He cultivates a family-oriented kitchen focused on learning, teaching, and leading by example, while upholding his own high standards of excellence, the release said. Dedicated to sourcing global flavors and ingredients, Estes crafts a menu that reflects the diverse culinary landscape of The Valley of the Sun.

Schuyler’s first initiative will be to revitalize Urban Agave, a neighborhood spot inspired by rich New Mexican culture, with fresh menu innovations and a focus on consistency and a lively atmosphere. His return heralds exciting developments and renewed energy for Sky Restaurant Concepts. Rejoining Urban Agave will reignite support for Libby Estes, the general manager of Urban Agave, creating a dynamic duo set to elevate the concept.

Additionally, Schuyler’s expertise will be invaluable for Sky Restaurant Concepts' new American-themed restaurant, Sparrow, set to debut later this year on Happy Valley Road and 83rd Avenue in the Trailhead development.
