Pomo Pizza opens new restaurant in Biltmore Fashion Park

Pomo Restaurant Group’s Pomo Pizzeria and Luna Gelateria announced its newest casual dining concept called Pomo Pizza.

The restaurant is a spinoff of Pomo Pizzeria and will specialize in Pinsa, Pizza Romana and classic-style pizza, according to a press release. The restaurant is open at the Biltmore Fashion Park, 2502 E. Camelback Road in Phoenix.

“We are excited to introduce Pomo Pizzeria’s younger sister, Pomo Pizza, to the community,” Pomo Pizzeria owner Stefano Fabbri said in a prepared statement.

“There has been demand for quite some time to introduce a concept like this to the Biltmore and we are thrilled offer classic Italian cuisine to our guests in a casual atmosphere.”

While Pomo Pizza does not have pizza Napoletana or Neapolitan pizza, it specializes in two brand-new entrées, the Pinsa Romana and Pizza Romana, with flavors exclusively being offered at the Biltmore location. The Pinsa Romana is a style of focaccia flatbread that predates pizza.

Pomo Pizza uses this style of dough that is handcrafted with 72 hours of leavening-maturation, which produces a light, easily digestible crust with a flavorful focaccia taste.

The Pizza Romana is a handmade, thick focaccia style pizza with a crisp bottom and airy center. The concept also has another round style pizza available that is hand-tossed and oven-baked, producing a thin and crispy crust.

“The Pinsa Romana is a dish that is currently trending in Italy and is an old recipe passed down from Roman times,” Mr. Fabbri said.

“The focaccia flatbread contains soy and rice flour, which is non-GMO and lowers its gluten content to provide for a light, airy taste and allows for the ingredients and sauce to really stand out. Our other new menu item, Pizza Romana, is a truly authentic Italian dish that is made with natural yeast and 48 hours of leavening-maturation.”

Notable dishes include the Arcadia Meat Market Pinsa, with sausage, tomato sauce, mozzarella, basil and oregano; and the Er Patata Pizza Romana, a vegetarian dish with baked sliced potato, mozzarella, rosemary and parmigiano.

Pomo Pizza’s menu includes pasta dishes like the Strozzapreti Salsiccia, with sausage, tomato sauce, cream, parmigiano and rosemary; and the Garmigna Boscaiola, with cremini mushrooms, sausage, cream and parmigiano.

The menu will also include Italian appetizers, bruschette, fresh salads and paninis on homemade baguettes for lunch, a release states.

Happy hour runs seven days a week from 3-6 p.m. and includes half off all drinks listed on the menu including beer, wine and cocktails. There is also a daily reverse happy hour available on weekdays from 8 p.m. to close and weekends from 9 p.m. to close.

The 1,500 square foot Pomo Pizza is a full-service eatery with an open kitchen with bar seating and a large pet-friendly outdoor patio. Pomo Pizza is open Sunday to Thursday from 11 a.m. to 9 p.m. and Friday and Saturday from 11 a.m. to 10 p.m.
